Paradise Ridge Winery 2005 Estate Sauvignon Blanc, Grandview Vineyard, Laura Chenel Chèvre
drizzled with Grapefruit Honey & Sprinkled with Grey Sea Salt and Served with Sweet Baguette

1 # Laura Chenel Chèvre
1/4 cup Grapefruit Olive Oil
1/4 cup Sonoma County Honey
1 Sweet Baguette
Grey Sea Salt

Over a low flame, gently whisk together grapefruit olive oil and Sonoma County honey until smooth & warm. Remove from heat and allow to cool. Drizzle over Chèvre & sprinkle with grey sea salt. Serve with slices of Sweet Baguette and enjoy with a glass of 2005 Paradise Ridge Estate Sauvignon Blanc.

Paradise Ridge Winery 2003 Pinot Noir, Elizabeth & Henry's Vineyard, Bellwether Farms Crecenza with
Fig & Cherry Compote

1# Bellwether Farms Crecenza, cut into wedges
1/2 cup dried figs, chopped coarsely
1/2 cup dried cherries, chopped coarsely
2 cups Paradise Ridge 2003 Pinot Noir
Walnut Bread

In small heavy bottom pot, heat figs, cherries and Paradise Ridge Pinot Noir for 20 minutes or until wine has thickened like syrup. Remove from heat, allow to cool. Drizzle over wedges of Bellwether Farms Crecenza. Serve with Walnut Bread and enjoy with a glass of 2003 Paradise Ridge Pinot Noir.

Paradise Ridge Winery 2002 Cabernet Sauvignon, Ladi's Vineyard, Vella Cheese Company Dry Jack Served with Paradise Ridge Cabernet Marinated Cherries

1 # Vella Cheese Company Dry Jack, cut into wedges
2 cups 2002 Paradise Ridge Cabernet Sauvignon
1 cup dried cherries, chopped coarsely
1 teaspoon Cocoa Powder
1/4 teaspoon Black Pepper, coarsely ground
Walnut Bread

In a heavy bottom pot, heat cherries, cocoa powder, black pepper and 2002 Paradise Ridge Cabernet Sauvignon. Simmer over low flame for 20 minutes or until cherries are plump. Remove from heat and allow to cool. Serve with wedges of Vella Cheese Company Dry Jack and Walnut Bread and enjoy with a glass of 2002 Paradise Ridge Cabernet Sauvignon.
