Crust
2 cups organic Graham Crackers
¼ cup organic granulated sugar
1 tablespoon organic cocoa powder
¼ cup organic sweet butter, melted
¼ cup organic Bison Brewing Stout
Filling
24 ounces organic cream cheese
1 ½ cup organic granulated sugar
4 organic whole eggs
½ cup organic Bison Brewing Stout
1 cup sour cream
1 tablespoon organic vanilla
8 ounces organic dark chocolate, melted
1 cup dried cherries, chopped
Preheat oven to 325 degrees.
Crust:
Place graham crackers, sugar and cocoa powder in food processor bowl and pulse until thoroughly blended and crumbs are even in size. Add in melted butter and Bison Brewing Stout and mix together. Pour mixture into 10 inch spring form pan. Bake in oven for 10 minutes. Remove from oven and allow to cool while preparing filling.
Filling:
Place cream cheese in large bowl and with a hand mixed whip until light and smooth. Add in eggs, Bison Brewing Stout, sour cream and vanilla, continuing to mix. Gently stir in melted chocolate. Sprinkle cherries on crust, and gently pour batter into pre-baked crust and place in oven for 60 minutes or until top of cheesecake is golden begins to pull away from sides of the spring form pan. Remove from oven and allow to cool at room temperature for 4 hours. Serve slices of cheesecake with a pint of Bison Brewing Chocolate Stout.
